The Best Guacamole of Your Life!

Like many of you, I love a good guac and this one, from nutritionist and author Kimberly Snyder, is my very favorite. It’s called Beauty Guacamole and it’s as delicious as it is nutritious. Here’s my secret: I use lime juice instead of lemon and I use tons of chopped garlic. I don’t mash up my avocados much as I like it chunky. I add a bit of cayenne pepper on top before serving. You can customize this recipe any way you like! 

April starts peak avocado season so whip up a batch of this glorious concoction and experience the joy for yourself. I love it with veggies or with Pretzel Crisps. This may sound odd but this guac is so good with the Buffalo Wing Pretzel Crisps. The spice of the pretzel crisps with the creamy guac is a match made in heaven.

Here’s the recipe, with Kimberly’s notes:

Kimberly Snyder’s Beauty Guacamole

INGREDIENTS

3 medium avocados

Juice of 1/2 a lemon

1 medium garlic clove chopped very finely

1/4 tsp. Celtic or Himalayan sea salt

Cayenne pepper to taste

1 cup chopped tomatoes

INSTRUCTIONS

Split the avocado lengthwise and remove the pit. Scoop out the green avocado flesh and add to a medium size mixing bowl. Add the lemon juice and mash the avocados, using a fork. Make it as smooth as you like, or if you like your guacamole chunky, the way I do, then don’t mash it too much! Add the garlic, sea salt and cayenne pepper and mix well.

Add the chopped tomatoes last, and mix well again. I like putting the tomatoes in as the last ingredient after everything else has already been thoroughly mixed, because I don’t like it when the tomatoes get to mushy. Enjoy!

I love serving this delicious guac when we entertain at home. Guests are often so surprised by the simple ingredients that provide such bright, deep flavor. I love this as an afternoon snack or on top of a mixture of butter lettuce and spinach leaves as a lunch or dinner salad. You can’t go wrong eating this any time!
